I'm a beginner to editing videos. Do you know software can convert mkv to dvd with multi-audio track and multi-subtitles?

Your asking two things here actually.
First, you want to know what can transcode an MKV's video component into
a compatible file that can be authored onto a DVD.
For that you will need Mpegstreamclip with perian installed.
You would then be able to export out the Video to DV Stream format,
and then export your audio selections out each as AIFF files.
Second, you then want to author the transcoded files to DVD,
and have multi subtitles and multi audio tracks.
For that, you would need DVD Studio Pro."Everyone has to learn, so that they can one day teach."
