Playing MKV files on my BlueRay standalone and some play at the correct 2:35 AR but others play full height with stretched image. Others won't play at all.

MKV supports display aspect ratio, but your blu ray player might not (probably doesn't)
Most blu ray players will only accept 1:1 square pixels and full frame sizes e.g. 1920x1080, 1280x720 . So a cropped MKV will usually not play unless you add borders
There can be many many reasons for a file not playing, including resolution, incompatible encoding settings, buffer settings
