Adobe Premiere has a user guide, which is where you should start. There are many free Adobe color correction tutorials on the internet, most of them aimed at photography -- but the tools and techniques are the same. Here are two examples:

    http://www.photoshopessentials.com/photo-editing/levels-curves/

Here is a free Adobe guide to histogram work with Adobe After Effects. Adobe has similar guiides for other products. (Do the tools for AE appear similar to those in Premiere and Photoshop? Most of them are).

You can use many of the same techniques with VirtualDub plugins (try ColorMill and the Gradation Curve for starters).

I had time only for the 3rd video. The color shots of the man talking are over-sharpened. I see bright ringing along edges; the video and the image of him have very few smooth gradations between brights, midtones, and shadows; the man's skin lacks subtle shadings and looks plastic. The bottom image has a color imbalance toward the blue side of magenta; his hair and lips are purple, shadows are too blue (look at his shirt collar). Contrast is too high. Many brights are 20 RGB points above spec and look unnatural.

The link below will get you a free Csamp.exe pixel color sampler that you can place on your desktop -- read pixel RGB values in VirtualDub and in images, the same way you've been reading pixel values in Premiere to analyze color problems:

Don't forget to calibrate your monitor. An EyeOne Display 2 or Display LT is the way to go.

The third image is over-processed and has created new errors.
