Before you tell me: yes, I have searched for this on google and even this website but I did not find any solutions that worked for me and that I understood. I have the 'K-Lite Mega Codec Pack 7.0.0' and the MPC version that comes with it 1.5.0.2827 and I have Windows 7 64-bit. When playing an .mkv that has two audio tracks it only shows the first option. I am able to use VLC to change tracks but I prefer MPC, in fact I dislike VLC greatly. So, is anyone able to help me?

Try reinstall haali media splitter and disable the mpchc builtin audio switcher(View->Options->Internal filters->Audio switcher).
Then be sure to check both under Play->Audio and Navigate->Audio Language and see if can you can change tracks.
