I'm trying to put into a simple sentence the difference between a codec and a format.

For instance, I know I can have an AVI format, but have the option of compressing it with a CinePak codec, DivX etc.

Could you give me a simple sentence or paragraph which would explain the difference?

I thought of saying,"AVI is the container, and the codec is the compression software used to compress your video/audio inside".

That is exactly what you should say - that covers it perfectly..

Format is too vague for this area.
