  1. Besides TMPGEnc MPEG Editor, what other tool will let me demux and (re)mux DVD/mpeg files? Are there any good freeware/open source tools that will do that job?

  2. For Demuxing I use either DGIndex or PGCDemux (which needs the IFO). For remuxing, author for DVD with Muxman. Remux with ImagoMPEG-Muxer. All free.

I agree on Muxman for (re)muxing.
    For demuxing I use...
    ...VSRip for subtitles (idx/sub format)
    ...Subrip for subtitles (srt format)
...DGIndex for AviSynth preparation using meGUI
    ...ReJig for audio/video stream extraction

If you use the search tools for athe tools hosted on this website and search for "ProjectX" you will find three of the four tools I use for demuxing and muxing of DVD/Mpeg2-files.:
ProjectX: for I-frame cutting of files and demuxing
Cuttermaran or Mpeg2Schnitt for more exact cutting (end cut also on P-frames)
and IfoEdit to generate a DVD-structure from demuxed video and audio tracks. The available freeware version though is only able to convert one single video track and one single audio track to a basic DVD structure without any menus.
