We know that:
A PMT of a program referred to by the PAT consists of a single section.OK
A single section is maximum 1024 bytes.OK
If, for example, that one section is 500 bytes then as it is transported in the stream?
Carried by 2 Transport stream packet?
How do I distinguish the first from the second?

I think a blood vessel just popped in my head. The grammatical structure of your inquiry makes me wonder if language translation software was being used.

If I understand what you're asking -- and I don't know if I really do -- I can only offer that each stream can be distinguished by its PID (Packet Identifier) and any other associated flags.

 Good luck.
