Baldrick's link is your best way to do this. I've done this many times and it's not difficult. However, if you do not have extra subtitle files already and need to create them from scratch, you probably should tell us. The link provides an excellent guide on adding already created subs to an existing DVD rip without changing the menus and it has no information on creating brand new subtitle files from scratch.

If you already have the subs then, yes, you'll have to add them into each episode, one-by-one, one subtitle file per episode. Just follow Baldrick's guide. In principle this is pretty easy.
