I don't use that program and have no idea if and how it allows you to select the subtitle colors. However, it's easy enough to do to the DVD itself after having created it. The easiest way is by using DVDSubEdit. Here's the guide:

you'll need to overide the sub profiles created by subtitle creator in avs2dvd, heres a small screencast:
i'm no expert in making screencasts but you'll need to located the avs2dvd install folder and follow the video
