I purchased a copy of Disney UP on Blu-Ray. I do not want my kids using the disc, so I made a MP4 file and the image is perfect. The problem is that in the movie the language that you hear is english but the language displayed in the movie and credits are not english. Where did I go wrong? It takes about 15 hours to rip the video. I can't find the setting that grabs all of the english parts.

You might have to use bdinfo to get correct playlist, see https://forum.videohelp.com/threads/309479-Blu-Ray-to-MKV-with-optioinal-multi-language...btitle-support
Or try another blu-ray to mp4 converter like bd-rebuilder(yep it can convert to mp4 also) or Blurip.
You could also try rip out correct audio track with clown_bd and then add it your mp4 with yamb.
