So I pretty much understand and have a good method of backing up/ripping regular DVD releases, but now I am working on a TV show project.
When I rip the whole disc to my PC, its usually just that. I want encode them individual files per episode. When I use a program like DVD Shrink, there's tooo many titles in the re-author sections and I don't know which to do.
I was thinking I should rip the whole disc. Then use Handbrake for encoding each episode. Again the problem is that there are just too many titles and it will take me forever, possibly encoding the wrong title.
Any suggestions for a TV show project, like this one.

Rip to you HDD with DVDFabDecrypter then open that with DVDShrink to "play with" the contents.....simple.

Fairuse Wizard is probably the easiest. But Smart Ripper can work, TV Ripper works really good well

Yep, another vote for Fairuse Wizard!!
I have been using it for a few years, more so lately, and love it.
I just ripped and converted all the episodes of The Munsters, they had 8 episodes per disc and you just open the ISO with FU and select all the episodes, set your specs and hit go and it converts all the episodes on one disc/ISO one after the other.
The only thing i don't like about it is it only handles 2 audio streams per video, but then i don't know of any that will handle 3 audio streams per video.

The Next Generation DVDs are pretty old now. They don't contain ARCCOS or anything like that. Even DVD Decrypter can rip them successfully. DVD Decrypter (if you can find it) does offer IFO ripping mode and you can usually use that to get individual episodes. If I remember correctly the Next Gen DVDs contain no extras, so it's really not that hard to get the episodes encoded.
Exactly how many titles are "too many" in your world? With no extras on the discs, just what exactly do you think you are going to be encoding? If you can't tell from the size of a VOB what is an episode and what is not, well, you've got some learning to do. (hint - episodes will be a LOT larger than things like the Paramount logo, FBI warning, etc.). -
What kind of "project" are you trying to create? What type of file do you want each episode to be? I haven't used the other software recommended above, but use SlySoft's CloneDVDMobile to rip TV dvd episodes into AVI, DiVX, iPod MP4 files. The interface is very simple, it opens the DVD showing a list of titles and as you click each one you get a video preview of the contents. As you go down the list you can just mark the ones you want to batch-process, then click the "go" button to rip them all directly into your desired file format (no disc image step is necessary). The only problem is CloneDVDMobile is payware, not freeware: SlySoft does offer a 30 day full-function trial version you can download, if you can get all the ST:TNG DVDs ripped in under 30 days I guess it would be "freeware" after all. If the DVDs have any protection embedded you would also need to download the trial version of SlySoft AnyDVD decryption engine.

Magic DVD Ripper allows you to rip straight to .MPG, and has batch capability so you can rip all the episodes from a disc in one go.
I prefer to remux to DVR-MS as it is a native format of my media center extender, but most encoding apps will take a .MPG file.
