I understand that the picture/sound quality degrades with every subsequent copy, but why?
What exactly is happening to create this phenomenon? And why is VHS more susceptible than Hi8 and other analog formats?

More noise, time base errors, loss of resolution/detail, oversharpening halos, and brightness/contrast/color shift with each generation. Hi8 is less susceptible because it's a higher quality format to begin with.
