I'm looking for a somewhat easy to use conversion tool to convert concert video DVDs. Many have LPCM audio and nearly all the programs I've tried want to convert to AC3 or MP3. A few seem to support direct pass through of AC3 or DTS, but not LPCM.
Ideally, I would like the option to set the video bitrate directly, rather that a predefined file size. All my rips have been done with DVDDecrypter in ISO mode. If the software were to support ISOs without having to mount them, that would be a bonus.
Quality video is important to me, but direct audio pass through is the most important feature.
Suggestions?

Even if none of the conversion programs you use do LPCM pass through, you can still get around that.
1) Demux the LPCM audio from the DVD.
2) Use VirtualDubMod to add the LPCM audio to your converted Xvid file and remove the existing audio.
3) Save new AVI format file using "Direct Stream Copy" mode in VirtualDubMod and in a few minutes you'll have your Xvid video and LPCM audio in an AVI container. -
I like the program, it appears to do everything I want to do. But it seems to be very very slow. Not that that is always a bad thing. It could have been the settings I was using.
With what? The rest of your suggestion looks good.

With the DVD on the hard drive, one way is to load the VOBs into DGIndex and save out the project file. It'll also give you any audio streams. With the DVD in the DVD-ROM, if you know what you're doing you can set DVD Decrypter for IFO Mode, go into the Stream Processing tab and set it to demux the audio you want.

When I use DVDdecrypter, I use File Mode and I save as one VOB (file splitting - none).
You could just open the VOB in Virtualdub (I use the new version) but it takes a while to read and open the file or you can take Manono's suggestion and use DGindex to demux the audio and create a d2v file that you can then open in Virtualdub with an avisynth script.
DGindex is part of DGMPGDec. You'll need Avisynth also.

What is good about this way is that it tells you if the audio starts before or after the video and what setting to use in Virtualdub to keep the AVI in sync. -

i would rather suggest keep LCPM audio, not to convert it.
for ripping you may try Virtualdub as saind by DarrellS.
