Probably insufficient bit rate. Give encoding details.
I'm seeing heavy frame loss (jerkiness) more than pixelation.Recommends: Kiva.org - Loans that change lives.

What is your framerate? If you're running 15 fps, you'll see jerkiness.
The video looks fine for an internet video - none of which I'd play on a 50 inch TV.
As to the clarity of the video (jerkiness issue, perhaps): It appears to be encoded at too low of a framerate.
You will have to encode at a much higher quality to eliminate this.;/ l ,[____], Its a Jeep thing,

First shoot at maximum camera quality which seems to be 848x480p 30fps.
Your camera shoots MJPEG (motion JPeg). Ideally you would use an editor that handles 30p timelines (not sure of Director). Export with sufficient bit rate to handle the high motion (~8Mb/s ave. MPeg2 or 4Mb/s ave. MPeg4).
A camera that could do 60fps would do better for your camera style. Or, try to hold the existing cam steady.Recommends: Kiva.org - Loans that change lives.

I downloaded the MOV file from Vimeo and it was 25 fps and played fairly smoothly (aside from the jerky camerawork, and the inherent jerkiness of 25 fps) with VLC. It did look like it was originally 30 fps and was converted to 25 fps by dropping every 6th frame. I don't know if you did that in your editor or if Vimeo did it while converting.
