I've been able to figure out most of the syntax, but how would you just get only one of the audio streams to output to the avi/mpeg?
I read about mapping but don't have a good grip on how the streams would be identified; also how to eliminate the streams I don't want to be copied into the newly created avi/mpeg.

Have you read any guide? Like http://howto-pages.org/ffmpeg/#map . And I guess you have to use a separate tool to identify the audio tracks, maybe mediainfo.
