If the buttons are part of the movie then you have to demux the video, process it, and then put it back. It can be done, but it is a lot of work.

If, on the otherhand, it is just sub-pictures overlaid on the video during authoring, you should be able to remove them with little fuss.

  4. Play the menu VOB in a player - not as a DVD, but as a file. Or open it in VDub(Mod). If you see the text then it's encoded as part of the video. Removing it will mean using a logo remover and you'll wind up with a big blurry mess. Either that or cover it up using video or a still from a different part of the menu (if there's any available that won't look too out of place). You may be better off leaving it in and just doing what you usually do. For this kind of thing I use AviSynth and its Overlay command to replace text with moving video or with a still from a different part of the menu.

If it's really just a sub picture you see, and it's not encoded as part of the menu video, then you edit the BMP. Extract it from the menu (DVDSubEdit), edit it to get rid of the unwanted text (you said you use Photoshop), and then replace it (DVDSubEdit again). And get rid of the button(s) (PGCEdit).
