Whenever I rip and convert a DVD to .avi format, I like to give it about 1G per hour to get a decent resolution. Someone told me that if I give it too much resolution, it would be like stretching a postage stamp so that the picture would lose video quality. Is this true?

You can't degrade a converted image or video by making the result larger, but you do reach a point where there is no improvement.
1 GB/hr is a long way from that limit.
