    What is the preferred software to use for converting Mpeg2 and DVDs across to MKV

    Each to their own. MKV is just a container. It depends how you want to encode as to what is best. I like Xvid4PSP. You can also use something like Handbrake or FairUseWizard, but you may have to manually package the results into the MKV container with mkvmerge/mkvtoolnix afterwards.
