Hello,
I managed to encode the subs with ffmpegX no problem, worked great. The one question I have and this already seems not possible but I figured I had to ask. Is it possible to get the subs to show up only when a different language is spoken? Instead of having them their for the entire movie? I am using a phillips dvd player that supports divX but when I click subtitles while its playing i get no options or anything. And i'm burning the avi to dvd with Burn on os x. The entire movie is english except for a few spanish parts where I need the subs, to have it at just those parts would be great, but I understand that this doesn't seem the normal route.

If these came from a DVD, check the original source to see if they have a subtitles track that does exactly what you're looking for. Most of them do. In that case, all you have to do is use that one.
Otherwise, do as Case suggests, and create your own by deleting the unwanted bits. It's a little tedious, but you can do it pretty quickly, nonetheless.
