Which AVI to MPEG2 file conversion application(s) do veteran converters recommend? Thanks!

For what purpose ? DVD ? General conversion ?

If DVD, do you want an DVD structure as output, or are you going to author separately ?

AVS2DVD uses HCEnc to encode the video, and can be set to output a programme stream, elementary streams, or a valid authored DVD structure.

Sorry, I'll be more specific. I intend on screen-recording off my pc using "CamStudio," convert the resultant AVI file to an MPEG2 file, then import that MPEG2 file into Womble's "MPEG Video Wizard DVD" for editing and authoring? What application best serves the need to convert those CamStudio-generated AVI files into MPEG2 files that will eventually be burned onto a DVD? Thanks again.

I like the free HCEnc encoder, but you need to write an avisynth file to do the resizing and to load the video, then load the avisynth script into HCEnc for encoding. AVStoDVD automates this process. If you output a combined MPG programme stream from AVStoDVD, you can edit this in Womble and author. Womble won't have to do any re-encoding because the the MPG file will be DVD compliant.
