Is there a video uploader to popular share sites like youtube/vimeo that has a pause button?
Or is there a way to continue the upload at a later time?

Try StreamFab Downloader and download from Netflix, Amazon, Youtube! Or Try DVDFab and copy Blu-rays! or rip iTunes movies!
