Any program that can rip subtitles from an avi or any video files easily??

It cannot be done easily, and there are no programs that do character recognition from an AVI files with burnt-in subts and output them to text directly either.
BTW this process wouldn't be any "ripping" (you can "rip" something that already exist only) but it would be very same as scanning book's page on your scanner and outputting it as text - aka OCR, Optical Character Recognition. Hence you would be creating new subtitles, not "ripping" them.
