Okay, so I have iDVD up and running and have figured out how to add video assets to it. But some of these videos run for in excess of ten minutes, and I want to put a chapter stop or two in them in order to break them up a little. But iDVD seems to only allow me to put in a chapter stop every X minutes in a dialogue box, rather than let me specify where my chapter stops go.
*Frustrated grumbling*
Any ideas on how to make iDVD let me specify exactly where my chapter stops should be?

this is a limitation of iDVD, with a weird workaround.
For more precise control of a DVD Structure,
in an Apple DVD Authoring app,
this would be the domain of DVDSP.
