I have followed this guide http://www.ffmpegx.com/dvd_sub.html, converting an avi file
but when I burn the DVD, I cannot see the subtitles, even when i turn them on with my remote. I have previewed the movie via it's TS folder in VLC and the subtitles are viewable. Why am I not able to see them when I watch the movie on my DVD player?
Anyone else had this problem?
Also,
the film plays ok (without subs) until i try to fast forward or skip scenes. This causes the movie to freeze on my DVD player and I have had to reload the disc to get it to play again...
Any help would be much appreciated as i have quite a few AVIs with subs that I'd like to burn to disc.

I believe the encoder is set to not display the DVD subtitles by default. You have to turn them on to view them. I don't know why your remote wouldn't activate them.
Try Apple DVD Player, instead of VLC, for testing compliancy of VIDEO_TS folders, as it is more strict to the DVD specification. VLC will play just about anything, which makes it less suitable for such testing.
Did you use the DVD mpeg2enc preset or the DVD ffmpeg preset?

I previewed the TS folder on the Apple DVD player and the subs were visible. I had encoded using the mpeg2enc preset the first time and also tried again using ffmpeg. Both methods were unsuccessful for viewing subs on my DVD player. I was able to select subtitles with my DVD remote but they did not show on the screen. The subs available were listed as "others", not English as would usually be the case. As I mentioned in my last post, the video (minus subs) did not play smoothly and froze if I tried to fast forward. Think it's probably time to buy a divX compatible player....but I still want to burn DVD compatible discs as well. Any more help would be greatly appreciated!

Using MyDVDEdit, you could assign a language identifier to a subtitle, as well as make one default to display. Not sure if it helps you in this case, as you say you could select it, but it did not show anyway.
MyDVDEdit is pretty low level, so you'll need some understanding of the DVD structure to find your way around the program.
One thing that could be a reason for not playing smoothly, would be if you made a NTSC Film (23.976 fps) DVD without applying a 3:2 pulldown.
