    wich is the best way (or professional way) to transcode .AC3 audio files to WAV (for editing). I've tryed with Adobe Audition 3.0, but it doesn't support .ac3 audio files.

    You can download the free AC3 plugin for Audition.

    I usually use HeadAC3he, but BeSweet and one of its GUIs work just as well.
