So I converted my videos to dvd with menu and I want to reedit the text of the menu, can I open the IFO file and edit the text? Does it work like that? Or do I have to convert the whole thing again? I want to edit the text I mistyped.

If the text is just a highlight then you may be able to fix it with something like MenuEdit or PGCEdit. If the text is embedded in an image or motion menu then you will have to re-create the menu, then slot it back into the disc in place of the one you have. Again, PGCEdit is something to look at. Go to PGCEdit in the tools section, and look at the associated guides, then go from there.

If it's a static menu and all you want is to edit some text, then scroll to the bottom to The Easy Way.
