I get the following error no matter which DVD format i choose. any suggestions?

DVD mpeg2enc defaults to decoding with Quicktime. And a default QuickTime install doesn't support Matroska.
Try switching to decoding with mplayer; or install Perian to help QuickTime deal with MKV files. The first option (mplayer) was 12% faster on my test file.
