What I found interesting was the way how the website was edited/animated. In my interpretation it's just cut out pictures which was animated.
Does that type of editing have a name?
How do we edit like that?
Are there variations of that type of editing, if so what?

It's not editing, it's animation. That was probably done mostly in Photoshop and flash, but the style has been around for many years. You can do it by extracting characters from clips, or from still images. The animation is basic, almost crude, and done by simple keyframes. if you are patient, you could do it in an editor like Vegas, but a compositing or motion graphics app like After Effects or Flash would make life easier because of the tools it has built in. It is really no different, and no harder, than cutting pictures out of a magazine, and taking consecutive frames of video as you move them around the page. That is all there is to it.
