I am attempting to author a demo DVD that will be in a interactive game format. I understand the how I will be creating the games through a series of menus, buttons, audio, pictures, and videos but for the game I want to have the capability of a generated score after a series of questions for example. Does anyone have any software suggestions for interactive games or an answer to how i can regurgitate a score back to the user?

DVD Lab Pro, Scenarist, DVD Studio Pro. All of these allow for programming behind the scenes, which is what you need to do for the scoring component. DLP even has some tutorials and a basic wizard for pub quiz type games.
There is also a system for authoring interactive games specifically, but I believe it is very expensive to license. Google might find it for you.Read my blog here.

What type of programming will be involved? I have used languages for software like visual basic and C# and this is my first DVD. Will this be difficult to learn within a few months?

It is a fairly limited language with limited facilities. Mostly it is pushing values in and out of registers, and jumping to locations based on these values. The real time is in planning out all the possible paths and creating all the assets. Remember you cannot change what is presented in the graphics on the fly, so every combination of text and graphics needs to be created in advance.
