I am trying to burn a DVD in Adobe Encore DVD 1.0. I'm putting episodes of a show on a disc. When I import the first episode it says the file is 465MB, but when I put it on a timeline it says 2.9GB of the disc is taken up. Why does it suddenly jump up in size like that? Is there anything I can do to change this, or will it simply be 2.9GB on the disc no matter what? I would greatly appreciate it if anyone could help me with this.

Encore only works with 720x480 MPEG-2 compliant DVD-Video spec files.
It's likely trying to re-encode.Want my help? Ask here! (not via PM!)

Most likely because your source video is highly-compressed (and non-DVD compliant). So the DVD Authoring program is telling you the size that will result by converting it to dvd-compliant mpeg (check your project settings for what videoa and audio type/bitrates it will be using to compress your source video).

not much if you want it on a dvd and to play in a standalone. you may be able to reduce the bitrate somewhat, but at the price of decreasing video quality.

I see... well thank you anyway for help, at least I know that I can't change anything.

You might want to upgrade to Encore CS3. I've never used it but I'm sure this has been rectified since 1.0 which is really old.
