I plan on connecting my MBP to my TV using DVI out and optical out. Note that I haven't actually tried to hook anything up yet- this is all speculative.
So I was ripping DVDs with Handbrake using the Apple TV settings, but then I heard that most receivers don't handle AAC format. I know that there's a hidden AC3 stream that handbrake includes. Will my receiver be able use this stream easily? or do I need to change some settings?
Also I considered just ripping everything as MKV's with AC3 audio- then in QTP saving those files at .MOV files. Is there really any drawback to doing this? Just seems like it would be a better choice for me - since I'm not using the Apple TV.
Also is there anything else I should keep in mind? Thanks

with my MBP, I use Apple's DVI2Video adapter and run the video into
my tv using S-VHS. For the audio, I use a standard Y audio cable from
Radio Shack (1/4" to RCA Stereo). I set the MBP to mirror out
 onto my TV.

I play all DVD Content ripped to the HD using VLC
( I rip Main Feature only), in FS, and just cue one after the other.
 *shrugs*

No transcoding to other files, unless I plan on putting it on the iPod
so that the wife can watch at a later date. If so, I use Visual Hub to
make iPod 5G ready files from the ripped content.
I don't rip a lot, only the stuff I know I can watch on lunch on the MBP
and then finish later at night ( like episode TV) or movie series
(Currently watching the Showtime Masters Of Horror series I picked up
for cheap at a couple of Hollywood Video's that have closed down.)"Everyone has to learn, so that they can one day teach."
