Good software to tag image and video streams that doesnt edit the headers?

I mainly use raw/binary content in the form of YUV and want a way to tag these files with the kind of YUV format, resolution, # of frames, interlaced/deinterlaced.

It seems most of the Image or Media stream organizers edit the image headers for tagging but thats not possible with YUV.
