Question 1: How do you change the length of the preview in the thumbnail? When I add a background MP3 I want it to play all the way, not stop after 30 seconds and loop.

Question 2: How to you make the background images 16:9, I added a image that IS in widescreen yet every time I'm finished and check it it's in 4:3. (P.S. I'm not talking the actual video by the way, just the BG image)

I may be mistaken, but none of basic menu functions provided by that app are configurable. For better control, you will need a dedicated authoring app, not a generic all-in-one tool.

First of all, if you create DVD, than mp3 audio is not acceptable as audio format for DVD.
The length of video will determine how long audio will play in motion thumb nail.
If you have static picture, than audio determine how long the picture will stay on before looping.
For 16:9 or 4:3 you need proper authoring software or DVDRemake where you can change flag for menu to show as 16:9.
