How can I use 2 separate audio streams with DVD Lab Pro and make them switchable, so when I'm watching the final DVD I can switch back and forth between the audio tracks? My goal is to author a live music DVD with a couple different audio sources and let the person watching choose which one they like best. I'll likely be using LPCM audio. Also, do I need to subtract the bitrate from both audio streams from the video bitrate for encoding if that makes sense.

Just add the audio streams to the audio tracks, see http://www.mediachance.com/dvdlab/helppro2/index.html and click on audio.
And yep, you need to subtract the bitrate from both audio streams when calculating the average video bitrate. The video and all audio tracks bitrates can be max 10.08 Mbps. -
Thanks. So if I used 2 LPCM tracks I would need to calculate the audio as 3,072kbps when calculating the final video bitrate, correct?
