    How can i extract audio stream from authored DVD and replace it with another?
    i also want to keep the DVD Menu, subtitles etc...
    is there any way to do it?

    Yep,
    Demux video and audio with pgcdemux
    Add back video, subs and new audio with muxman
    Add back the menus with vobblanker.
