Which is better for use in home theater bitstream out or PCM out from my set top player?
The player is hooked up to a Yamaha 6.1 amp.

You aren't likely to tell any difference. It mostly boils down to what your receiver supports.

If you are using an optical digital cable then use "Bitstream",
"Pcm" is stereo only, -
Bitstream for AC3 or DTS
