I have a .AVI file that I am trying to BURN subtitles onto. When I press encode it just jumps straight to finished and nothing happens. I'd like to note that I also cannot PREVIEW.

Possibly there is something wrong with mplayer. Have you tried installing mplayer again?
ffmpegX has two Preview buttons. The one in the top-right corner is to preview what already has been encoded (while the encoding is busy). The one in the bottom-right corner of the Filters tab is to preview (with the chosen settings) before encoding.
