Just poking around looking for something that can do this. I found the HDfury cable thingy but was wondering if I could use something like this:

with some other cables. Can someone help me out?

No, you can't use that adaptor. Some graphics cards include YPbPr or RGB video at the DVI connector. That device is for that type of card. All it does it route the analog video pins from the DVI connector to the RCA connectors. HDMI does not include analog video, ever. In fact, the whole point of HDMI (HDCP) is to eliminate analog video or any type of unencrypted video, by 2013.
