I see a lot of the MiniDV cameras out there don't have a mic input. Does there exist any type of converter cable thing that would allow for recording from a mic?...

Maybe the 'hard way', but you could record the audio separately with a digital recorder, tape or solid state, and sync that with your video.
In the 'old days',, they used a clapper board to mark the audio and video starts and used that to set the sync of the audio with the video in post processing. Still works, though.
