I use Mac the Ripper to rip standard DVDs, but what about HD DVD? What's out there for that, if anything?

If little or nothing is available, don't count on it to come. There is only one major Hollywood studio (Universal) now supporting HD-DVD. Paramount is reported to have dropped HD-DVD in favor of Blu-ray (but they deny the report in the Financial Times). Warner Bros. dropped out last week.
The only remaining "plus" to HD-DVD is you can burn HD-DVD formatted material onto regular DVD+R, DVD-R, and their dual layer variants, which is still pretty cool.
