My boyfriend bought EasyCap USB 2.0, which supposedly supports 60HZ, only we can't get it to work like we weant it to. Using Virtualdub, we'll manage to get a signal, but it'll be in Black and White.
What are we doing wrong and how do we fix this?

The specs say that it supports either NTSC or PAL.
You may want to try capturing with VirtualVCR but that app wouldn't even open on my system.Support NTSC, PAL Video format.
Supports high quality video resolution: NTSC 720 x 480 @ 30fps, PAL 720 x 576 @ 25fps
I have a feeling you have been terribly lied to.
