You might check the following (all of these settings require you to have your iPod connected, though):

On the iPod Summary tab (from the left window, LIBRARY > DEVICES > (your iPod's name), or it'll automatically be selected when your iPod is connected):

Is the "Manually manage music" box selected? If not, iTunes will attempt to synchronize its library with the one on the iPod. "Enable disk use" couldn't hurt, either, but that's a different story.

Next, on the Music tab, there should be a checkbox for "Sync music".
On the Podcasts tab, there should be a "Sync" checkbox with a dropdown.
Finally, on the Contacts tab, you'll see two Sync checkboxes. For Contacts, it's "Sync contacts from:", and for Calendars, it's "Sync calendars from Microsoft Outlook." See if the behavior continues if all of these boxes aren't enabled.

Hmm... does it do that anytime you try to transfer something to your iPod?

Have you noticed your iPod acting strange in any way? I believe (as I'm not at a computer that has iTunes installed at the moment, so I can't check) there should be an option to verify the iPod's working correctly in the Help menu.
