DVD Rebuilder is for compressing DVDs to fit a smaller size - think of it as a high quality DVD Shrink. It does not do menus.
You are relatively limited in how much you can alter an existing menu. If the work you need to do is extensive, it is often simpler to re-author.Read my blog here.
