I downloaded a video with Japanese subtitles and i wanted to know if i could take them off with Sony Vegas or something like that. And there is a small watermark at the top left hand corner. Can these be removed?

You would have to use one of the Delogo filters (such as Delogo) for virtualdub. It may work for the watermark - or at least reduce it to a small blob or blur int he corner. You will have less success with subtitles. And you will have to re-encode the file at the end of the process.
