how can I change pictures used in a dvd menu?

Hello all

I have a dvd movie ( matrix reloaded ) and now I want to change pictures used in menus ( root menu, subtitle menu ....). I have copied the DVD to hard disk ( using DVD Decrypter ).

How can I change pictures used in menus of this dvd?
Should I open IFO file and edit it?
Which program is handy for this?
If I convert vob files to mpeg2 files so Can I use Adobe Encore to make my own dvd with new menus and new subtitles?
