If you use stereo analogue connections from the player to the TV (the red and white connectors) then it will downmix automatically to 2 channels. That is how DVD players are designed to handle dolby digital (AC3).

How do you watch other DVDs ? Most do not have 2 channel audio as well as 5.1.

If you must then what you have to do is demux the audio, re-encode it to 2.0 AC3, then remux it. Not difficult, but you really don't have to do it.
