Help on compression

Hi, I want to extract a chapter from a DVD and then add a lower third with livetype or motion, I know how to do that but im having some questions here hope someone can help.

I extracted the chapter from the DVD using MacTheRipper, then I need to convert to QT movie in order to open in FinalCutPro but here I have doubt shold I convert with MPEG Streamclip or you recommend other software?, I tryed MPEG Streamclip, but when I change to .mov I have many compress options (H.264, apple cinepak, apple jpeg, jpeg 2000 and a large list...) wich one is the most indicated for preserving a good quality and making not too big files and not too compressed for manipulating them later in FinalCut? and after doing my stuff in FinalCut i want to burn them on DVD so I have to export again as QT ? and wich compression you recommend?
