    Is there any benefit to choosing ffmpeg encoder over mpeg2enc and vice versa? And does chossing mplayer over QT make any difference? Most of the tutorials I read just say 'choose one'.

    Here's some background (others will surely chime in with more info):

    Mpeg2enc is slower than ffmpeg, but has different options. For example, if you want to encode kvcds, you must use mpeg2enc; the ffmpeg mpeg engine doesn't support it.

    Mplayer must be used when encoding from video_ts folders (ffmpegx automatically chooses it, independently of what you specify). Quicktime reportedly does better, however, at maintaining good audio-video sync under certain conditions.
