  1. I'm trying to convert .DAT files to a MOV files so I can edit them. I can't open them in quicktime but VLC and DivX player open them without problems.
What programs can I use to convert these files to a usable format?

If they are .DAT files from a VCD, just change the extension to .mpg and your programs may recognize them. They should be a MPEG-1 video file.

  3. For some reason my computer only changes the name of the file, not the extension, when I try this.

Open Windows Explorer. Click on Tools -> Folder Options. Click on the View tab, then scroll down and uncheck the box marked "Hide extensions of known file types". You should now see the .dat on your file name, and be able to change it.
