I've imported my video from my DV camera and it broke it up into about 18 different size files (I think AVI's) totaling 7.4gig. which seems strange since it's really only about a total of 40 min tape time, but, I want to put all these onto one 8.5gig DVD . . . but every time I try to join or merge these files into one file to burn to a DVD, the furtherest I've gotten using various applications is vob files, but I can never get them combined into 1 overall file to burn onto a DVD.
Can someone recommend a fairly easy application to use to make me a DVD out of these files?

DV requires approx 13 GB per hour of footage, so your files sound about right.
The structure for a DVD is a video_ts folder, containing .ifo, .bup and .vob files. A VOB file can be no larger than 1000MB in size.

A dvd-video is not just one file, www.videohelp.com/dvd#struct
Or do you just want one big file? it wont be a dvd-video then. -
Until you learn a little more about DVDs and the DVD structure, you could try a program like ConvertXToDVD. I use it for quick DV to DVD conversions You should be able to add all the part files in there. If you need to do some editing first, VirtualDub Mod with the addition of the Panasonic DV Codec or similar works well and it's freeware.

Well,, looks like I figured it out . . . I used Tmpgenc, Win Avi, DVD lab pro, cucusoft, etc. But, I finally tried out Nero ultimate 7 and it did it.
And it was fairly simple.
Thank you guys for your help. I think I'll also try one you suggested, ConvertXtoDVD, for future.
